Being one, let me tell you a quick fix this problem!
Take 60g uncooked rice for each person and boil.
In a separate pan, lightly fry one chopped onion, one diced red pepper, and one handful of chopped mange tout.
Add in 2tbsp curry powder (mild or hot depending on your preference) and a tin of chopped tomatoes, simmer for 15 minutes and voila! Done!
